Happy October, friends! Thanks to everyone who voted in my poll a few weeks ago on your fav fall flavor. The clear winner was PUMPKIN SPICE - sorry apple pie, we're done with you this season. It's a clear winner in my books too, and I'm so bummed that the grocery store versions are all filled with junk. I've played around with a few recipes incorporating your fall pick and am so excited to share this one with you guys! They taste AMAZING - just like a combination of both the inside of a pumpkin pie and the sweet pecans from a pecan pie. They're chewy and crunchy at the same time, and perfect for a quick snack. Best of all, they're guilt free. For you diet conscious people, they're vegan, Paleo, gluten free, dairy free, soy free, refined sugar free, ummm and Whole30 friendly. I know you may be asking me "then where the heck is the flavor is?!" but I promise you, these won't disappoint!
15-18 bites (these should last you as a snack for up to 9 days if you have 2 per day)
*1/3 cup canned pumpkin
*1/2 cup pecans
*1 cup Medjool dates
*2 tsp vanilla
*1 tsp cinnamon
*1/2 tsp pumpkin spice powder, which can be found in stores in the fall (but it is just a mix of cinnamon, nutmeg, and cloves if you have them handy already)
*Protein powder of choice
*Coconut oil (melted) or MCT oil
*Pinch of salt
*Soak your dates in hot water for 10 min - this softens them and makes it easier to break down/blend
*While the dates are soaking, pulse your pecans in a food processor or high-powered blender until they are ground (I like leaving them a little chunkier than super ground up, but it's up to you).
*Add the rest of the ingredients, minus the dates
*After soaking the dates for 10 min, drain them and add them into the food processor as well
*Your mixture should be the right consistency - if you find that it's too dry and impossibly to blend, add in 1-2 tbsp of water
*Once completely mixed, use your hands to form small balls with your mixture. As you can see from my photo, mine aren't perfectly rounded - I left larger pecan pieces in there
*Store in the fridge in a airtight container and enjoy as you wish!
I like taking these to work as a snack - they're PERFECT for the afternoon pick-me-up. Filled with protein and healthy fats, they're sure to keep you full until dinner. My favorite part? They don't have added sugar. Ditch the carb- and sugar-heavy snacks in the crinkly packaging and opt in for heartier, fat-rich snacks and see how you feel.
