Get ready for your Monday to feel a little more like Friday. With only 5 ingredients TOTAL, and featuring the newest "it" ingredient, these balls are going to change your life! What's the newest "it" ingredient I'm referring to? *NOTE: there is no relation to the scary movie so you can relax! :) I'm actually talking about CHICKPEAS! I feel like I'm seeing these little guys everywhere, and I'm not mad :) Before you make a face, just trust me, that these little bites taste no different than actual cookie dough - minus the junk, and plus all the protein and fiber! Without further ado, here ya go!
*3/4 cup canned chickpeas/garbanzo beans (I actually didn't realize they're the same thing!)
*3/4 cup nut nutter - I used cashew butter (my fav) but you can sub with almond if that's your thing
*1/2 cup coconut flour
*1/2 cup dark chocolate chips (I use Enjoy Life mini chocolate chips that are free from allergens, including gluten, dairy, soy, etc.) - NOT sponsored, just a fan :)
*1/4 cup honey or maple syrup
*Pulse chickpeas, nut butter, coconut flour, and honey in a food processor until dough-like consistency is achieved
*Throw in chocolate chips and mix manually with your hands to ensure they are spread evenly throughout the mixture
*Scoop out and form into balls - if you make minis, you should be able to get a good 24 out of this recipe; if you want to make larger ones, you can get a good 12 :)
*Eat 5 or 12 (you do you, boo!) and store the rest in the fridge for 3-4 days
You can enjoy these little ones as a snack, dessert, or even breakfast!
