There are very few things I'm sad to have given up ever since going gluten free - and this Italian holiday bread and dessert is one of them. I have tried to find a gluten-free version in stores, or even a legit recipe that doesn't require 12-18 hours of pre-work, but I haven't had much luck. Today, my sick self decided to yolo it up and see what happens. Today, my sick self succeeded! I won't like - this turned out more like a orange and lemon zest flavored bread similar to a panettone, but it was definitely missing that airy and fluffy texture. As long as I get my zesty flavors, I'm totally fine with that! I used the infamous Simple Mills pancake/waffle mix, and added and modified a few things. Buon appetito, amici!
